Coming Soon…

Ah! I’m so sorry it has been so long since my last post. The past few days have been crazy busy for me, and I just haven’t had time to cook much. Anyway, while I don’t have a complete recipe to share in this post, I do plan on cooking a bunch this weekend and hopefully during this week.

So here is what to expect in the coming days…

  • Homemade Pasta
  • My own, original pizza recipe
  • Spinach, Mushroom, Chicken Stir Fry
  • Homemade bread (hopefully)

I hope to get to all these recipes and hopefully MORE, but I am going to be pretty busy again this weekend, so these might me the only ones I manage. The first recipe will either be the pasta or the stir fry. I can’t wait to get cooking!

Again, sorry for the recipe lapse. I hope to make it up with these (hopefully) delicious recipes which are, by the way, all ORIGINAL recipes. I am so excited to try them out! Thanks for your patience.

Upcoming Recipes and a Delicious Idea

This week and weekend, I have some great ideas and recipes planned. I’m just going to get straight to it. My top recipe at the moment that I want to make is a new pizza recipe, using Pamela’s Pancake and Baking Mix. I am so excited! However, I also have been thinking a bunch, and I really want to try to create my own original pizza crust recipe. Using that, I have a great recipe idea or two that may or may not involve some form of mini pizzas…We’ll see. Sticking on the pizza path, I also want to make one of my favorite quick and delicious meals, pizza paninis, a recipe I have made multiple times and the past and can’t wait to post about. Lastly on the pizza trail is a recipe called Portabella Pizzas, which aren’t really pizzas, but there are pizza parts involved!

Moving away from the realm of pizza, I really want to make either my own cheese muffins or my popover recipe (which I think is finally complete and ready to try out). Then the last, but not least, recipe on my list is a recent creation/idea that I have referred to as Egg(y) Pancakes. Do not let the name deter you!

I cannot wait to get posting this week. Look forward to some great recipes and PICTURES (I promise I will have some).

Upcoming Weekend Plan

Okay, this weekend I really want to get cooking! There are so many recipes I want to try, but I have to spread them out. After all, I can’t make tens of recipes over the course of only two days (well, I guess I could, but I don’t see that happening anytime soon). Given that fact, I have to pick and choose my recipes and make them whenever I have a large chunck of free time. Otherwise, I have to really try hard to squeeze in any special recipes during the week.

Anyway, looking forward to this coming weekend. These are the recipes I hope/want to make:

  • pancake popovers or regular popovers
  • pancake crepes
  • flourless pizza

Of course, this is just a vague outline and I will really try hard to fit these in. However, I will say this: I definitely plan on making pancake crepes and probably a popover recipe, but I am not entirely sure I will be able to make the flourless pizza. Nevertheless, I do have flourless pizza as my #1 recipe to try/make and am so excited to do so (I found the recipe almost 2 months ago and have been dying to try it), so I do really want to attempt it this weekend.

Now, just as an added note, these are just recipes I want to make at some point (soon):

  • brazilian cheese rolls
  • spoon bread
  • cheese muffins
  • corn muffins
  • baked pancake
  • mozzarella sticks

Happy Easter…and Birthday!

Happy Easter everyone! Enjoy your first day to enjoy whatever you gave up for lent, enjoy the candy, enjoy the Easter egg hunts, enjoy the joy, enjoy your kids, enjoy your parents, enjoy your family, enjoy today! I’d also like to give a shout out to my sister, who just turned 18 today…Happy Birthday Sis’!

This is going to be a great cooking day, because it is a double special occasion after all. Here is my family’s delicious meal plan for Easter:

Breakfast: Eggs and biscuits (sausage for those non-GF-ers)

Lunch: Leftover cheese pizza and salad, and some hard boiled eggs, of course (after we die them!)

Dinner: Eating out for my sister’s birthday

I love Easter–it is a great, carefree holiday. Having said that, however, I need to get to church now!
